Cho began as an inspiration sparked on a bustling morning at Tokyo's iconic Tsukiji Fish Market, amidst the vibrant rhythm of auctioneers and fishermen proudly presenting their pristine catches. Wandering through the maze-like stalls, savoring fresh sashimi sliced moments earlier, the dream took root—an idea to create a culinary experience that authentically captures the soul of Japan.

Later, strolling through Asakusa Street, surrounded by aromas of sizzling yakitori, steaming bowls of ramen, and street vendors expertly crafting bites bursting with flavor, the vision became clearer. Cho was envisioned as a celebration of these unforgettable tastes and vibrant street scenes.

Over the years, that initial inspiration evolved into a meticulously refined menu, carefully honed through countless hours of experimentation and dedication. Each dish at Cho is crafted not only with precision but with deep respect for tradition and authenticity.
